1. The slow fade you never questioned
New pan: eggs slide with nothing. Six months in: a little oil. A year in: real oil, medium heat, and a spatula standing by. Eventually it's "the bad pan," and you buy a new one.
Everyone treats this like age like shoes wearing thin. It isn't. A pan is metal; metal doesn't get old in a year. What changed is the coating: a layer thinner than paint, sitting on top of the metal. When eggs start sticking, that layer is going away.
Which raises the question nobody asks about a pan, and everybody should:

2. Where the non-stick went
There are only two places it can go, and neither of them is "nowhere."
Some of it wears off in tiny particles during normal cooking and cleaning into the food, onto the plates. And on most conventional pans, that coating is made with PFAS the substances you've seen called "forever chemicals," because they don't break down. Not in the pan. Not in the food. Not in us.
Look at your pan. Scratches? A pale patch in the middle? Every one of those marks is coating that has already left. You didn't do anything wrong to cause it and that's the next part.
3. It wasn't the kids, and it wasn't you
Here's what surprises everyone: the scratches don't come from the fork someone used that one time, or from the kids "helping."
They come from ordinary cooking. Your spatula, landing in the same spot in the middle of the pan, hundreds of mornings in a row. Normal stirring. Normal washing. That's why the worn patch is always dead centre where the cooking happens and never at the edges.
The design is the reason: on every non-stick pan you've ever owned, the coating is the top layer. The most fragile part of the pan is the part everything touches first. It was always going to wear off. The only question was how fast.
That's why the careful people's pans die too. The wooden spoons, the hand-washing, the "don't touch my pan" it slows it down. It has never once stopped it.
4. The question nobody in cookware asked
For fifty years the industry's answer to fragile coatings has been rules. No metal. Low heat. Hand-wash. Replace it every year or two. Rules are what you print on a box when the design has no defence.
Here's the question that fixes it, and it's almost embarrassingly simple:

5. The shield — what raised steel ridges are
When a spatula, a whisk, a metal spoon anything lands on the pan, it rides across the tops of the steel ridges. It physically cannot reach the coating below. Steel takes every hit; the coating never gets touched.
That's the whole invention. Not a tougher coating coatings can always wear if something rubs them. A coating that nothing rubs.
6. What this means on a Tuesday
Eggs go in with barely a sheen of oil and slide onto the plate in one shake this year and next year, because the surface that makes them slide is the surface nothing ever touches.
The metal spatula is fine. The whisk is fine. A toddler's spoon on the rim is fine. One wipe and it's back on the stove.
And the slow death from section one the creeping oil, the "bad pan" drawer, the replacement every year or two that cycle just doesn't start. There's nothing exposed to wear off.

Why we built it
We kept replacing "safe" pans that died in a year and durable pans we didn't want our kids eating from. Every option made us pick. So we stopped trying to invent a tougher coating and protected the one that was already clean.

Yes, utensils ride the steel ridges and never reach the coating.
Doesn't the food touch the ridges?
No, it still cooks like a normal Ceramic pan. The only thing that ridges does is protecting the coating
Do the ridges make it harder to clean?
No, the food doesn't stick in the riges. It even easier to clean it because the high quality ceramic coating we have, it help to release the food easier.
